Chef and restaurateur Ross Lewis opened Chapter One in 1992, which held a Michelin star for 15 years under his direction.

In 2021, he passed the baton to Mickael Viljanen, one of the country's most accomplished chefs who had held two Michelin stars at The Greenhouse since 2019.

Since its relaunch under the stewardship of chef-patron Mickael Viljanen and patron Ross Lewis, this restaurant had redefined luxury dining in Dublin, with two Michelin stars awarded within just seven months to Chapter One by Mickael Viljanen.

Bringing together Mickael's energy, talent and passion, and the experience and mentoring expertise of Ross, Chapter One merged cultures, suppliers and teams, taking the restaurant to the next level, with a focus on excellence in a clean, modern style.

Today Chapter One by Mickael Viljanen continues to honour tradition while breaking new ground.
